This book it’s really a comprehensive guide to making macaroons. Love it!!
Shinee - Used your book tonight to bake some macarons. I used the Italian meringue method and had an issue with bulging feet. I went to page 67 for troubleshooting this issue and have determined 2 issues I think I had.
1. Overworked the macaron batter. I kind of knew it before baking them
2. Oven Temp to high
The reason why I’m writing you is that in the “Possible Causes” section, you say “Oven temperature to low”. Then in your “To prevent this issue” section, you suggest using an oven thermometer to check the oven temp, since if the oven is to hot, the shells rise too quickly, then collapse causing the bulge.
